Ingredients

For the Pie Crust (You can also use a pre-made pie crust):

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3-4 tablespoons ice water

For the Pecan Filling:

  • 1 cup granulated sugar
  • 1 cup corn syrup (light or dark)
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves

Instructions

Preparing the Pie Crust:

  1. In a food processor, combine the flour and salt. Pulse a few times to mix.
  2. Combine the cold, cubed butter, and pulse in a food processor until the mixture resembles coarse crumbs.
  3. While pulsing, gradually add the ice water, one tablespoon at a time. Continue beating until the dough comes together when pinched.
  4. Turn the dough onto a floured surface and gently shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 1 hour or until firm.
  5. Preheat your oven to 375°F (190°C).
  6. Roll out the chilled dough to fit a 9-inch pie pan on a floured surface. Press the rolled dough into the bottom and sides of the pie pan. Trim any excess dough and crimp the edges to your liking.

Preparing the Pecan Filling:

  1. Thoroughly combine the granulated sugar, corn syrup, eggs, melted butter, and vanilla extract in a mixing bowl.
  2. Evenly distribute the pecan halves across the bottom of the pie crust.
  3. Pour the pecan filling mixture over the pecans, coating them evenly.

Baking the Pecan Pie:

  1. Place the pie on a baking sheet to catch any drippings.
  2. Bake the pie for 45-50 minutes, or until the filling is set and slightly puffed, in a preheated oven.
  3. Cover the pie crust edges with aluminum foil if they brown too quickly.
  4. When the pie is done, remove it from the oven and place it on a wire rack to cool. As it cools, the filling will continue to set.
  5. Before slicing and serving, allow the pie to cool completely.
