  • 1 cup boiling water

For the frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup milk or cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

For the cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prepare for baking.
  2. In a large mixing bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to dry ingredients. Beat with a mixer for 2 mins.
  4. Lower the speed and slowly pour in boiling water, mixing until the batter is smooth. It’s normal for the batter to be thin.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake the cakes for 30-35 minutes in a preheated oven until a toothpick comes out clean from the center.
  7. Take the cakes out of the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes onto a wire rack to cool down completely.

For the frosting:

  1. In a mixing bowl, beat the softened butter until creamy and smooth.
  2. Sift the powdered sugar and cocoa powder into the butter and mix on low speed until well combined.
  3. Add milk/cream, vanilla extract, and salt. Beat on med-high until creamy.

Assembling the cake:

  1. Place one cooled cake layer on a serving plate.
  2. Spread a layer of frosting over the top of the first cake layer.
  3. Place the second cake layer on top of the frosting.
  4. Frost the top and sides of the cake with the remaining frosting.

Finishing touches:

  1. You can decorate the cake with chocolate shavings, sprinkles, or other desired toppings.
  2. Allow the cake to set in the refrigerator for a few hours before slicing and serving.
