Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour

  • 1 green bell pepper, chopped

  • 2 cups chicken or seafood broth
  • 1 can (14.5 oz) diced tomatoes, drained

  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • Cooked white rice for serving
  • Chopped green onions for garnish

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Combine the onion, bell pepper, and celery. Cook for 5-7 minutes or until soft.
  3. Add the minced garlic and cook for another 1-2 minutes.
  4. Flour should be sprinkled on top and mixed in. Cook, stirring constantly, until the roux is deep golden (10-15 minutes), being careful not to burn.
  5. Gradually add chicken or seafood broth, stirring to blend.
  6. Add diced tomatoes (drained), Cajun seasoning, paprika, cayenne, salt, and black pepper. Mix well.
  7. Simmer for 15-20 mins to meld flavors and thicken.
  8. Put in peeled shrimp, and cook 5-7 mins until pink.
  9. Taste and adjust seasoning.
  10. Just before serving, add chopped parsley.

Serving the Shrimp Étouffée:

  1. Over hot, cooked white rice, serve the shrimp étouffée.
  2. Add chopped green onions to the garnish for flavor and color.
