Southern Cornbread Recipe

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour

  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar or lemon juice, let sit for 5 minutes)
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 2 large eggs

Instructions

  1. Preheat your oven to 425°F (220°C). Place a cast iron skillet (about 9-10 inches) in the oven to keep the batter warm while you prepare. You can use a baking or cake pan if you don’t have a cast iron pan.
  2. Whisk together cornmeal, all-purpose flour, sugar (if using), baking powder, and salt in a large bowl. Mix well together.
  3. Whisk together the butter, melted butter, and eggs in a separate bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; A few circles are good.
  5. Carefully remove the hot pan from the oven (remember to use an oven mitt as the pan will be pretty hot). Add butter or oil to the pan to prevent it from sticking, then swirl it around to coat the bottom and sides.
  6. Spread the corn batter evenly into the hot pan and pour.
  7. Place the pan back in the oven and bake for about 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes clean.
  8. Once cooked, remove the pan from the oven and let the chicken breasts cool for a few minutes before slicing and serving.
  9. Serve cornbread as a hot side dish to complement a variety of southern dishes, such as chili, barbecue, or fried chicken.
