Ingredients

  • 8 oz (about 2 cups) elbow macaroni
  • 4 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dry mustard (optional)
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • 1 cup shredded mozzarella cheese (optional for extra cheesiness)
  • 1/2 cup breadcrumbs (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook macaroni according to package directions until al dente. Remove and set aside.
  3. Whisk the milk and eggs in a large mixing bowl until well combined.
  4. In a separate bowl, combine shredded cheddar cheese and mozzarella cheese.
  5. Melt the butter in a large skillet over medium heat. Once melted, add the flour and mix constantly for about 1-2 minutes to get a roux. The roux should be smooth and bubbly.
  6. Gradually, continue to whisk in the milk and egg mixture. Cook, until the mixture thickens and thickens.
  7. Add salt, black pepper, onion powder, paprika, dried mustard (if using), and cayenne pepper (if using). Stir well to combine.
  8. Reduce the heat and gradually add about 3 cups of the shredded cheese, stirring until the cheese is melted and the sauce is smooth
  9. Add the cooked macaroni to the cheese sauce and stir to coat the pasta evenly.
  10. Pour the macaroni and cheese mixture into a greased pan.
  11. Combine the remaining 1 cup grated cheese with the breadcrumbs in a small bowl. Spread this mixture evenly over the macaroni.
  12. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and the cheese is bubbly.
  13. Remove from oven and let cool for a few minutes before serving.
