Southern Style Potato Salad Recipe

Ingredients

  • 2 pounds (about 4-5 medium) russet or red potatoes, peeled and cut into 1-inch cubes
  • 3 large eggs
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon white vinegar or apple cider vinegar
  • Salt and black pepper to taste
  • Paprika for garnish

Instructions

  1. Place potato cubes in a pot, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer for 10-15 minutes until fork-tender. Do not overcook.
  2. While the potatoes cook, place eggs in a pot and cover with cold water. Bring to a boil, cover, remove from heat and let sit for 10-12 minutes. Drain and cool eggs in cold water. Peel and chop.
  3. Drain the cooked potatoes and let them cool for a few minutes.
  4. In a large mixing bowl, whisk the mayonnaise, Dijon mustard, chopped red onion, chopped parsley, sweet pickle relish, and vinegar until well combined.
  5. Add the chopped eggs to the dressing and mix gently.
  6. Add the slightly cooled potatoes to the dressing mixture and gently toss to coat the potatoes with the dressing.
  7. Season the potato salad with salt and black pepper to taste. Adjust the seasoning to your preference.
  8. Cover the bowl of potato salad with plastic wrap and refrigerate for at least an hour before serving. 
  9. Sprinkle paprika over the top before serving for added color. 
  10. Serve cold as a side dish for barbecues, picnics, or alongside grilled meats.
